This is a great recipe for pralines I just made. You can find it in “Cooking with Cajun Women: Recipes and Remembrances from South Louisiana Kitchens” by Nicole Denée Fontenot. The recipe is actually by Ms. Viola Rider. Enjoy!
PECAN PRALINES
1 cup brown sugar
1 cup granulated sugar
½ cup evaporated milk
2 tablespoons oleo (margarine) – I prefer butter
1 cup chopped pecans
1 teaspoon vanilla extract
Combine sugars and milk. Cook until sugars are dissolved and mixture begins to boil, about 10 minutes. Add oleo or butter and pecans and continue to cook until mixture forms a small ball when dropped in cold water. Remove from heat and add vanilla extract. Beat until candy shows signs of thickening. Drop by spoonfuls on waxed paper, which has been buttered. Let cool.
Makes 1 to 2 dozen.
