Great late-night Korean cuisine is definitely one of the things I miss about New York.Chef and I used to order kimchi pancakes (a.k.a. kimchijeon) from this great 24 hour restaurant, Kunjip, all the time because it’s such a great snack/appetizer to share.
Kimchijeon is a fairly inexpensive dish to make because of the simple and basic* ingredients: flour, water, kimchi, sugar, and salt. It doesn’t make sense for me to drive ($$!) to a Korean restaurant for something like this ($!) when I can easily make it at home.
*Okay, maybe “basic” is the wrong word to use, but we always have a gallon-sized container of kimchi in our fridge.
