Leftover Turkey = Gumbo!

In case you’re worried about what to do with all that leftover holiday turkey – a person can only eat so many leftovers or turkey-cranberry-stuffing sandwiches – click over to this recipe for Leftover Holiday Turkey Gumbo from The Gumbo Pages. Now that I’ve made it many a time, I no longer need a recipe. But this one looks pretty close to mine. I don’t use shrimp or okra, I now cheat with dark roux from a jar and I use the smokiest sausage I can find. And while Nana goes for gumbo spooned over a traditional scoop of rice, I’m all about ladling it over potato salad. Don’t scoff, it’s a thing we do here in Louisiana and it’s amazing. Bon appétit!
