Soon, I’ll be leaving the Pacific Northwest’s lovely summer days to head off to my new life in the great, big, juicy apple. But first, I want to make the most of my time with friends and food (of course) while at my present home. ‘Cause everyone knows good food in New York is just non-existent. Yeah….uh…..o.k. It’s been a wonderful sunny summer so far, full of dinners on the porch and lazy lunches on the deck of my new fave El Chupacabra.
While being complete snobs and shirking our socializing duties at our street’s block party, one of my roommates and I decided to dine al fresco on the porch on leftovers. I pulled out her day-old broccoli soup from the fridge, added a few chopped veggies, some cream, and a scoach (unsure of spelling) of chipotle powder. Topped it off with some feta cheese, served it with toasted tortillas, cheese, and wine, and VOILA! A great, nutritious dinner fit for the queens we were pretending to be. It don’t get no better than this…
Ahhhh El Chupacabra. THE perfect place for hanging out on the deck outside in the summer sun. Go there and you are sure to enjoy an ice-cold Pacifico and REAL (no, really real) Mexican tacos filled with meat, a few chopped onions, and a slice of avocado, served with two types of salsa (3/$5). Try out the pork carnitas tacos or the torta filled with your choice of meat (also vegetarian). Easy-going, filling, and absolutely perfect any day of the week. The service is a tad slow, but expected with only one waitress. Just thinking about it makes me want to run over there immediately. So adieu for now, and enjoy these lazy summer days while they last. Well worth it!
